I’ve never really been one to eat breakfast on a regular basis. Even as a kid, I’d scoff at the home-cooked, hot breakfasts that my mom would make for my brother. Sure, I’ll indulge in the occasional stack of Pumpkin Pancakes, but certainly not at 7:00AM, as I’m running out the door. Personally, I’d rather hit the snooze button 18 million times instead of noshing on a hot breakfast before work.

Since becoming pregnant, the whole not eating breakfast thing is no longer an option. This girl is hungry in the mornings, okay sometimes beyond hungry, so it’s been necessary for us to keep a variety of healthy breakfast options available. And since Eric is pretty much the best guy on the planet, he cooks me breakfast every morning so I can still hit the snooze button. I’m telling you, he’s a master at Egg In a Hole – my current fave!

Homemade Oatmeal with Cashews and Honey

Cozy up with delicious, homemade oatmeal with cashew butter, cashews, cranberries and honey.

Ingredients

  • 2 tablespoons Jif® Creamy Cashew Butter
  • 1 cup hot cooked oatmeal
  • 1-2 tablespoons honey
  • 2 tablespoons dried cranberries
  • 2 tablespoons roasted cashews
  • milk optional
  • cinnamon optional
  • brown sugar optional

Instructions 

  • In a small serving bowl, stir cashew butter into hot cooked oatmeal until smooth.
  • Drizzle with honey. Top with honey, dried cranberries, and cashews.
  • If desired, add milk, cinnamon and brown sugar to taste.
