Make a ganache

Combine chocolate, butter, and heavy cream in a double boiler until smooth

Chill it

Pour the ganache into a baking dish and chill. Try adding Grand Marnier, Fraise des Bois or Chambord, or Kahlua for infused truffles!

Scoop the truffles

Use a small scoop or a melon baller to scoop out the chilled ganache. Roll it into one inch balls, and place on a parchment-lined baking sheet.

Roll the truffles in your favorite coatings. Try cocoa powder, sprinkles, finely chopped nuts, or shredded coconut
