If you love apple cider donuts, you have to try these apple cider blondies! Rich cider, nutty brown butter, and warm spices flavor these chewy bars.

Brown butter in a heavy-bottomed pan, swirling often, until deeply golden and nutty. Pour into a large bowl.

Pour cider into the same pan. Simmer over medium-high heat until reduced to 1/2 cup – about 35 minutes. Add to brown butter and cool to room temperature.

Whisk together granulated sugar and 1 teaspoon of apple pie spice. Set aside.

Whisk together flour, salt, baking soda, and remaining apple pie spice. Set aside.

Add brown sugar to the cider/brown butter mixture. Then add eggs and vanilla.

Fold dry ingredients into wet ingredients until just combined.

Spread batter into a lined 9x13-inch pan. Smooth the top and sprinkle with the spiced sugar mixture.

Bake for about 35-40 minutes. Let cool for 1 hour in the pan before slicing and enjoying.
