MAKE THE OREO CRUST
Combine crushed Oreo cookies with melted butter and press into the bottom of a springform pan. Bake for 8 minutes.
MIX THE FILLING
Mix together cream cheese with sugar, eggs, and Baileys Irish Cream.
BAKE THE CHEESECAKE
Add the cheesecake filling to the crust and bake in a water bath for 55-60 minutes. Cool completely before chilling at least 8 hours.
TOP WITH GANACHE
Before serving, top the cheesecake with Baileys-spiked chocolate ganache for an extra hit of Irish cream flavor.
