Look no further than this pumpkin baked oatmeal for a filling breakfast you can enjoy on the weekend or make ahead for the whole week!

In a large bowl, mix together oats, brown sugar, pumpkin pie spice, baking powder, and salt.


In another bowl, whisk together pumpkin puree, milk, eggs, maple syrup, melted butter, and vanilla.
