banana oat bread

This banana oat bread combines the sweetness of bananas with the nuttiness of rolled oats for a satisfying breakfast or snack.

In a large bowl, beat mashed bananas, granulated sugar, brown sugar, yogurt or sour cream, oil, eggs, and vanilla until combined.


In a second bowl, whisk together flour, oats, baking powder, baking soda, salt, and cinnamon.


Add the dry ingredients to the wet ingredients and mix until just combined.


Pour batter into a lined loaf pan. If desired, sprinkle with additional oats and coarse sugar. 


Bake for 70-75 minutes. Let cool in the pan for 10 minutes before using the parchment to lift the bread onto a wire rack to finish cooling.
