caramel apple cheesecake

A rich brown sugar cheesecake is topped with spiced apples and salted caramel sauce in this decadent caramel apple cheesecake recipe.

Mix gingersnap cookie crumbs with melted butter. Press into a 9-inch springform pan and bake for 8 minutes. Let cool.


Beat cream cheese until smooth, then add brown sugar. Add eggs one at at time, then apple pie spice, flour, and vanilla.


Pour the cheesecake filling over the baked crust. Place the springform pan in a roasting pan and add boiling water halfway up the side of the springform.


Bake for 1 hour. Turn off oven and crack door open; leave cheesecake in the cooling oven for 1 hour. Cool to room temp and chill 8 hours.


Before serving, cook sliced apples in butter, brown sugar, and apple pie spice. Let cool.


To serve, top the cheesecake with the apples and drizzle with salted caramel sauce. Enjoy!
