apple crisp bars

A shortbread crust, tart apples, sweet caramel, and crisp topping combine for these decadent apple crisp bars.

In the bowl of a stand mixer, combine butter, flour, brown sugar, apple pie spice, and salt until crumbly.


Firmly press the mixture into the bottom of a lined 9x13-inch pan. Bake for 12 minutes. Set aside.


Make the filling: Combine sliced apples, lemon juice, and vanilla. Add flour, brown sugar, and apple pie spice.


Make the topping: Mix flour, brown sugar, oats, baking powder, apple pie spice, and salt. Work in butter until clumps form.


Cut soft caramels into small pieces and scatter them evenly over the baked crust. Add just under half of the topping mixture.


Spread apple filling over the mixture in an even layer.


Finish with the rest of the topping. Bake for 40-45 minutes, until top is golden and apples are soft.


Cool before slicing. If desired, serve with ice cream and caramel sauce.
