Cowboy cookies are the epitome of a big, hearty cookie! These are loaded with oats, chocolate, coconut, and pecans.

Whisk together flour, baking powder, baking soda, cinnamon, and salt. Set aside.


Beat butter until smooth and creamy, then beat in granulated and brown sugars until fluffy.


Mix in eggs one at a time, followed by vanilla.


Slowly add the flour mixture until just combined.


Mix in chocolate chips, oats, coconut, and chopped pecans until well combined. Chill for 12-24 hours.


Portion with a 1/4-cup measure or large scoop. Flatten dough balls slightly before baking.


If desired, sprinkle with a bit of flaky sea salt after removing from the oven. Let cool on the baking sheet 5 minutes before moving to a wire rack.
