This easy carrot bundt cake is perfectly moist thanks to pureed carrots in the batter. A tangy cream cheese frosting is the best finish!

Sift together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.


Whisk together sugar, vegetable oil, eggs, vanilla, and carrot puree or carrot baby food.


Stir dry ingredients into the wet ingredients. Fold in shredded carrots and optional chopped walnuts.


Pour batter into a greased bundt pan. Bake for 50-60 minutes or until a tester inserted in the middle comes out clean.


Cool in the pan for 20 minutes, then turn out onto a wire rack to finish cooling.


Before serving, top the cake with cream cheese frosting. Enjoy!
