chicken & gnocchi soup

This easy chicken and gnocchi soup comes together in about 30 minutes for a quick weeknight comfort-food dinner. 

In a large pot, cook onion, carrot, and celery in butter until softened, about 5 minutes. Add garlic and cook 1 more minute.


Add chicken stock and bring to a simmer. Whisk together half-and-half with flour.


Slowly add half-and-half mixture; simmer to thicken. Add herbs, chicken, and gnocchi; cook until gnocchi is plump and tender.


Stir in spinach until wilted. Taste and adjust seasoning before serving. Enjoy!
