chicken Spaghetti

Chicken spaghetti is a simple, cheesy casserole packed with chicken, pasta, and Rotel for tons of flavor in one easy recipe!

Cook spaghetti in salted water until just shy of al dente. Reserve some pasta water and drain. Toss with olive oil and set aside.


Make the sauce by cooking onions and peppers. Add Rotel, then chicken stock and cream of chicken and mushroom soup. Melt in cheese.


Stir in chicken and cooked pasta. Add some of the reserved pasta water if needed to thin out the sauce.


Transfer to a greased baking dish and bake for 30-40 minutes, until sauce is bubbly and top is golden.
