coconut cupcakes

These easy coconut cupcakes start with a cake mix and are topped with an incredible coconut-lime frosting.

Beat together cake mix, coconut pudding mix, eggs, oil, coconut milk, and vanilla. Fold in shredded coconut.


Divide batter evenly between 24 cupcake wells. Bake and cool completely.


While cupcakes bake, simmer remaining coconut milk to reduce. Let cool, then chill for about an hour.


Beat together softened butter and reduced/cooled coconut milk. Add lime zest, vanilla, & coconut extract, then powdered sugar.


Pipe frosting onto the cooled cupcakes and garnish with more coconut and lime zest.
