This silky, tart lime curd is made in the microwave! Making a citrus curd has never been easier.

Whisk together eggs and sugar until smooth and well combined.


Whisk in lime juice, lime zest, and melted butter.


Microwave on high for 3-5 minutes, stirring after each minute, until thickened.


Run curd through a fine mesh sieve and store in jars in the refrigerator for up to 2 weeks.
