mini pumpkin pies

These bite-size mini pumpkin pies are quick and easy to make but are so cute and impressive for your holiday table.

Mix pumpkin, sugar, salt, pumpkin pie spice, egg, vanilla, and evaporated milk until smooth.


Line phyllo shells on a baking sheet and add about 1.5 teaspoons of filling to each shell.


Bake the pies for 11-13 minutes, or until the filling is set. 


Cool, then garnish with whipped cream before serving, if desired.
