southwest pasta salad

This easy southwest pasta salad is full of southwest-inspired veggies and tossed with a creamy, zesty dressing.

Cook your favorite short, shaped pasta to al dente according to package directions. Drain, rinse with cold water, and toss with olive oil.


Whisk together mayo, sour cream, chipotle sauce, spices, lime juice, and salt and pepper.


Add cooked pasta to a large bowl with black beans, roasted corn, cheese, tomatoes, bell pepper, green chiles, cilantro, and cooked chicken.


Add the dressing and toss to combine. Cover and chill for at least 1 hour before serving.
