oatmeal pancakes

These oatmeal pancakes are hearty thanks to oats and whole wheat flour, while still being fluffy and delicious!

Pulse rolled oats in a food processor until coarsely ground.

1

Add the oats to a large bowl with buttermilk and let rest for 10 minutes.

2

Add eggs, sugar, and vanilla. Whisk until well combined.

3

Add whole wheat flour, all purpose flour, baking powder, baking soda, cinnamon, and salt. Let batter rest for 5-10 minutes.

4

Heat a large skillet or griddle over medium heat. Once hot, add melted butter to the pancake batter and whisk to combine.

5

Use a 1/4-cup measure to portion batter onto the hot, buttered griddle. Cook until bubbles form and burst on the top, then flip and cook 1-2 more minutes.

6

Repeat with remaining batter. Serve warm with butter, syrup, or apple compote.
