Guinness chocolate cake uses stout beer for a deeply flavored, tender cake finished with chocolate ganache frosting.

Bring Guinness, butter, and coffee to a simmer. Whisk in cocoa powder. Let cool.

Whisk together flour, sugar, baking powder, and salt. Set aside.

Beat eggs with vanilla and sour cream until smooth.

Add the chocolate-Guinness mixture and mix until well combined.

Slowly add the dry ingredients. Mix on low speed until just combined. Divide into 3 greased 8-inch cake pans.

Let cakes cool in the pans for 10 minutes, then turn out and let cool completely.

Mix together chocolate ganache, then let cool in the refrigerator, stirring every 20-30 minutes until spreadable, about 90 minutes.

Stack cake layers, spreading 2/3 cup ganache frosting between each layer.

Spread the rest of the frosting over the top and sides of the cake. Garnish with chocolate curls.
