Peppermint Marshmallows

Bursting with cool peppermint and topped with a pretty red swirl, these homemade peppermint marshmallows are dreamy on a cup of hot cocoa!

Add water to the bowl of a stand mixer fitted with the whisk attachment. Top with 3 envelopes of unflavored gelatin and set aside.

In a saucepan, bring water, corn syrup, and sugar to a boil. Boil hard for 1 minute.

Pour syrup over the gelatin. Beat on high speed for 12 minutes, until fluffy and stiff peaks form. Mix in vanilla, peppermint, and crushed candy canes, if using.

Pour into a pan lined with greased plastic wrap. Drop red food coloring on the top and swirl with an oiled chopstick. Cover with greased plastic wrap.

Let rest for 4 hours or overnight. Cut with an oiled knife and dredge in a mix of corn starch and powdered sugar. Store in an airtight container at room temperature.
