Impossibly easy coconut pie makes its own crust layer in the oven along with a custardy filling and chewy coconut topping.

Whisk eggs, Bisquick mix, and sugar in a bowl until smooth.


Add milk, melted butter, and vanilla until well combined.


Stir in shredded or flaked sweetened coconut.


Pour mixture into a greased 9-inch pie plate set on a rimmed baking sheet. Bake for 45-50 minutes.


Let pie cool for at least an hour before serving. Serve chilled or room temperature.
