This lemon chicken with orzo is made in one pot for a delicious weeknight meal!

Season chicken generously with salt and pepper. Sear on both sides in a dutch oven until cooked through. Remove to a plate.

Add onion to the pot. Cook until softened; add garlic and herbs. Cook 1 more minute.

Stir in flour; cook 1 minute. Add chicken stock and mustard. Bring to a simmer.

Add orzo, cream, parmesan, lemon zest, lemon juice, and halved cherry tomatoes.

Cover and cook, stirring occasionally, 8-10 minutes or until orzo is cooked through.

Stir spinach into the pot. Nestle chicken into the dish; let spinach wilt and chicken warm through. Enjoy!
