Light and sweet ricotta cheesecake is topped with fresh berries for a beautiful red, white, & blue dessert for July 4th!
Prepare the graham cracker crust and bake for 7 minutes. Let cool.
make the crust
Beat together the ricotta, sugar, lemon zest, vanilla, & salt. Add the eggs and beat until smooth.
make the filling
Pour the filling into the crust and bake. Let cool, then chill for 6+ hours.
Bake the cheesecake
Decorate the top with red and blue berries. Brush with warmed apricot jam for a beautiful sheen!
