This spaghetti carbonara is simple yet big on flavor! A rich, creamy sauce pairs with crispy pancetta for a perfect pasta dish.

While a pot of salted water comes to a boil, cook pancetta in a pan until crisp. Remove to a plate and keep the rendered fat.

Cook pasta in the boiling water. While pasta cooks, whisk together eggs, egg yolks, and cheese.

Drain pasta, reserving some of the water. Toss cooked pasta with the cooked pancetta and the reserved fat.

Slowly whisk 1/4 cup of the pasta water into the egg mixture. Add mixture to the pasta and toss to coat.
