strawberry banana muffins

These strawberry banana muffins are bursting with flavor from fresh strawberries, bananas, and oats. They're a hearty and delicious breakfast or snack! 

Mix strawberries and 2 tablespoons sugar; let rest for 1 hour. After an hour, strain and reserve both the juice and the berries.


Cream together sugar and butter until light and fluffy, about 3 minutes.


Add in the eggs, banana and vanilla until well combined.


Alternate adding the dry ingredients with the reserved juice from the strawberries.


Fold in the diced strawberries. Divide between lined muffin cups and bake. Let cool on a wire rack.
