strawberry marshmallows

Make these pillowy soft strawberry marshmallows as a Valentine's Day treat or to pop into a cup of hot chocolate!

Whisk together freeze-dried strawberry powder, water, and unflavored gelatin.


Bring water, sugar, and corn syrup to a boil; boil hard for 1 minute.


Slowly stream the hot sugar mixture into the gelatin mixture. Beat for 12 minutes. Add vanilla.


Spread into a lined and sprayed pan and set overnight at room temp.


Use a greased knife, scissors, or cookie cutters to cut into pieces. Dredge in a mix of cornstarch, strawberry powder, and powdered sugar.


Store in an airtight container at room temperature for 3-4 weeks.
