strawberry oat bars

With a fresh strawberry filling and oat-packed crust, strawberry oat bars are a delicious and easy spring dessert.

Stir together strawberries and sugar; let sit for 10 minutes. Add lemon juice and corn starch. Set aside.


With a stand mixer, mix together flour, oats, sugar, butter, cinnamon, salt, and vanilla until the mix looks like coarse meal. 


Firmly press 2/3 of the crust mixture into the bottom of a 9x13 pan.


Spread berry filling on top, then sprinkle on the rest of the crust mixture.


Bake for 35-40 minutes, until golden. Let cool completely before slicing and enjoying.
