Strawberry Shortcake Cupcakes

Strawberry shortcake cupcakes have a yellow sponge cake base that's filled with macerated strawberries and topped with whipped cream frosting.

Make a yellow sponge cake batter with eggs, butter, milk, flour, leavening, and sugar.


Divide the batter between 18 lined cupcake wells and bake for about 15 minutes.


Let the cupcakes cool completely before assembling.


Stir together diced strawberries and sugar; let rest while you core the cupcakes. Add a small amount of strawberries to each cupcake center.


Frost the top of each cupcake with whipped cream frosting. Go around the edges a couple of times to make a small well.


Just before serving, top each cupcake with another spoonful of the macerated strawberries.
