Preheat oven to 350℉ and line two standard cupcake pans with liners.
To make the cupcakes with a cake mix
Combine all ingredients and stir until smooth.
1 box yellow cake mix, 1 can pumpkin puree, 3 large eggs, 1/3 cup vegetable oil, 1/2 cup milk, 1 tablespoon pumpkin pie spice
To make the cupcakes from scratch
Combine oil, eggs, sugar, pumpkin puree and vanilla in one bowl. In a separate bowl combine flour, baking soda, baking powder, salt and pumpkin pie spice. Combine wet the dry ingredients and stir just until smooth.
3/4 cup vegetable oil, 4 large eggs, 2 cups granulated sugar, 1 can pumpkin puree, 1 teaspoon pure vanilla extract, 2 cups all purpose flour, 2 teaspoons baking soda, 1 teaspoon baking powder, 1 teaspoon salt, 1 tablespoon pumpkin pie spice
Fill cupcake liners 3/4 full and bake for 18-22 minutes or until an inserted knife comes out clean. Let cool completely.
Make the maple frosting
Beat butter until smooth. Add Mapleine and vanilla extract. Slowly add in powdered sugar until you reach your desired consistency. If it gets too thick, add 1 tablespoon of milk to thin it out!
1 cup unsalted butter, 1 teaspoon Mapleine, 1 teaspoon vanilla extract, 2 to 3 cups powdered sugar
Frost cooled cupcake and top with candy, sprinkles or nothing at all!
