You know what I love? I love it when a company that already makes really stellar products pushes the envelope, looking for every way possible to improve their products.

Take Edgeware, for example. You already read about my infatuation with my zester, and how I consider it an essential kitchen tool for a myriad of reasons. Let me tell you how cool it was to see the newest line of Edgeware zesters and graters and realize that they’ve just flat out taken it to the next level.

I don’t know if they were hanging out in my brain or what, but they totally improved their products in every way I could think of to suggest, if I were suggesting.

Their new line of zesters and graters has an improved V-shape tooth for more consistent grating, and they’ve covered the entire plane with foodsafe non-stick coating so I no longer have to spend 5 minutes banging the darn thing on the edge of the bowl to get all the stubborn bits loose.

I’m really excited that their citrus zester now comes with a squeegee (who doesn’t love the word squeegee?!) to help you easily slide off all the bits of zest that stick to the underside of the tool. Let me tell you something: I love my zester, but I hated having to do that swipe with my finger. It just felt cringe worthy. I don’t like to talk about it. Hooray for Edgeware!

I have never used a zester. There. I said it. I would love to make lemon bars first, although I don’t have a specific recipe in mind. I think I have one in my recipe box from my Grandma, so that would probably be where I would start.

I have to admit never using a zester… i would probably use it in a lemon pie or cake recipe, or oranges.. I use graters all the time…i love using them with cinnamon, garlic..

I would make
NESTLE’S White Chip Orange Cookies
Ingredients
2 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter or margarine, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
2 to 3 teaspoons grated orange peel
2 cups (12-ounce package) Nestlé Toll House Premier White Morsels
Preparation
PREHEAT oven to 350° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar and brown sugar in large mixer bowl until creamy. Beat in egg and orange peel. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 10 to 12 minutes or until edges are light golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
Makes 3 1/2 dozen cookies

Lemon is my favorite flavor, so I think I would make lemon curd [Alton Brown's recipe] and use it to fill mini lemon cupcakes. I also make lemon swiss meringue buttercream and the zest is what makes it! I’ve been using a crappy grater so it would be great to have a nice set!

Since I love pasta, I would love to make a lemon pasta with parmesan. So…grate the parmesan with the large grater, nutmeg with the spice grater, and lemon zest with the citrus zester. Simple, but delicious! Maybe add some roasted asparagus too!

Thanks Jamie! This is fantastic! If I win the first recipe I will make is a lemon meringue pie! I use a combo recipe of a Lemon Chess Pie and a Meringue off of a Pumpkin Meringue pie recipe I have! Both from familyfun.com! My hubby’s birthday is on national Pi day (as in 3.14) also March 14th, and his favorite is Lemon Meringue – and this is what I make! He loves it and this recipe made me a lover too!

I am going to make Lemon Orzo Pasta:
Lemon juice and zest from 2 lemons
1 small leek, finely chopped
1 clove garlic, minced
1/2 – 3/4 cup olive oil
1 box orzo pasta, cooked
salt and pepper to taste.
Saute lemon zest, leeks and garlic in olive oil. It may seem like a lot, but it’s not when combined with the pasta. Add the cooked pasta to the lemon/leek/garlic mixture. Season with salt and pepper.
VERY easy, but tasty recipe. Adjust the lemon, leeks and garlic to your liking.

I would make quick alfredo sauce with 8oz cream cheese, 1/2 c milk 1/3 cup grated parmesan with a little fresh grated nutmeg. Cook for 3 minutes in microwave or until cheese is melted and all is combined. Served over hot noodles & grilled chicken. Yummy! My kids hid/lost my zester would love to win this!

I am a fan of MBA on Facebook. The first dish that I would make with my Edgeware package would be Lemon Fusilli Pasta with Arugula by Barefoot Contessa. Not only are there lemons to zest, but a large amount of parmesan to grate! A perfect recipe to test out the products:)

1 tablespoon good olive oil
1 tablespoon minced garlic (2 cloves)
2 cups heavy cream
3 lemons
Kosher salt and freshly ground black pepper
1 bunch broccoli
1 pound dried fusilli pasta
1/2 pound baby arugula (or 2 bunches of common arugula, leaves cut in thirds)
1/2 cup freshly grated Parmesan
1 pint grape or cherry tomatoes, halved
Directions
Heat the olive oil in a medium saucepan over medium heat, add the garlic, and cook for 60 seconds. Add the cream, the zest from 2 lemons, the juice of 2 lemons, 2 teaspoons of salt, and 1 teaspoon of pepper. Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, until it starts to thicken.

Meanwhile, cut the broccoli in florets and discard the stem. Cook the florets in a pot of boiling salted water for 3 to 5 minutes, until tender but still firm. Drain the broccoli and run under cold water to stop the cooking. Set aside.

Bring a large pot of water to a boil, add 1 tablespoon of salt and the pasta, and cook according to the directions on the package, about 12 minutes, stirring occasionally. Drain the pasta in a colander and place it back into the pot. Immediately add the cream mixture and cook it over medium-low heat for 3 minutes, until most of the sauce has been absorbed in the pasta. Pour the hot pasta into a large bowl, add the arugula, Parmesan, tomatoes, and cooked broccoli. Cut the last lemon in half lengthwise, slice it 1/4-inch thick crosswise, and add it to the pasta. Toss well, season to taste, and serve hot.

I have always wanted a zester! The “tool” I have does not work! My brother loves all things lemon and it definitely would make things easier with the proper zester! I would make my favorite lemon cake. It is so light and has a great fresh blueberry sauce to go with it!

Honestly, the first recipe I made with the package would probably not involve zesting anything! I’d probably have a go at homemade four cheese mac and cheese (been dying to try PW’s recipe)…and bust out all that cheese grating with my brand new box grater! And I’d have to follow it up with Picky Palate’s Ice Cream Sundae Layer Cake so I could grate all the chocolate shavings too :) Decadence totally justified by new toys!

I’ll use this zester for a ton of different things, but the first thing is almost certainly going to be the following:

Saute’d broccoli and cauliflower:

1, Take one head each of the stated vegetables, remove the core and stems and separate the florets. Alternatively, use 8 ounces of frozen florets. If you do that, thaw the vegetables. If you use fresh, steam it for five minutes.

2. Heat a couple tablespoons olive oil in a heavy skillet.

3. Add one tablespoon lemon zest, a half-teaspoon red pepper flakes, and one clove chopped garlic.

4. Add the vegetables to the pan and saute for four or five minutes until they reach a desired doneness.

My favorite steak rub uses lemon zest.

Combine the following in a small bowl:
3 cloves garlic, minced
1 tsp dried thyme
1 tsp dried parsley
3/4 tsp dried oregano
3/4 tsp sea salt
3/4 tsp dried oregano
zest from 1 lemon
7 tsp olive oil
Mix well. Rub onto both sides of steak (I use this for med sized London Broils and Flank Steaks) at least 30 mins before cooking

I’d like to use the fine paddle grater to grate the Parmesan cheese for this Quick Alfredo Sauce.

Quick Alfredo Sauce
1 package (8 ounces) cream cheese
1 cup milk
4 tablespoons butter
1 cup grated Parmesan cheese

Combine all ingredients in a medium saucepan and place over low heat. Heat until the ingredients are melted and well combined, stirring frequently, approximately 15 minutes. Pour over pasta when needed or refrigerate until ready to use.

I make a lemon cake for my friend as her birthday present every year. (Okay, I’ve done it once, but I want to make it a tradition) I don’t have a zester. In fact, what I use looks like something my husband found out in the garage. I have a feeling this would help make the once-made lemon birthday cake into a yearly tradition!

I have to admit, I bake a lot and whenever a recipe calls for fresh lemon zest, I always substitute lemon juice or lemon extract because it just seems like a hassle. The first thing I would bake would be lemon bars with shortbread crust.

I would use it to make my mother-in-law’s homemade “Lemon Yum Yum”! It is made with a pecan and butter and flour crust and then you use cream cheese and lemon pudding for the next layer, finishing off with whipped cream and freshly “zested” lemon peel on top. Hope to win!

I would make spicy lime-cilantro marinated steak!

Ingredients

6 cloves garlic
1/2 red onion, chopped
2 limes, juiced
1 medium jalapeno chile pepper
2 tablespoons fresh thyme leaves
1 cup loosely packed cilantro leaves
3/4 cup corn oil
2 tablespoons honey
3 pounds beef flank steak
kosher salt to taste
Directions

Puree the garlic, onion, lime juice, jalapeno, thyme, cilantro, corn oil, and honey into the bowl of a blender or food processor until the ingredients are well incorporated. Marinate the flank steak with 1/2 cup of the puree in a resealable bag overnight in the refrigerator. Reserve the rest of the puree to use later as a sauce.
Preheat a grill for medium-high heat.
While grill is warming, remove the meat from the refrigerator and let sit at room temperature for at least 30 minutes. Discard any marinade left in the bag. Liberally season the steak with the kosher salt, and cook to desired doneness, approximately 4 minutes per side for medium-rare.
To serve, slice the steak against the grain into 1/8 to 1/4 inch slices, and drizzle the remaining marinade over the meat.

I’ve been wanting to make this Meyer lemon pudding cake tart. Here is the recipe:

MEYER LEMON PUDDING CAKE TART
The pudding cake can be made without the tart shell, if you like. Make the filling mixture, pour it into a shallow 2-quart (ungreased) casserole, and bake as directed. If you can’t find Meyers, use regular lemons. The tart pastry makes enough for 2 9-inch shells. For the 12-inch shell here, you’ll have extra dough to cut into decorative shapes. Serves 8 to 10.

FOR THE TART

2 3/4 cups all-purpose flour

1/2 cup sugar

1/2 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch cubes [CORRECTION - DATE: Wednesday, January 8, 2003: * CORRECTION: BECAUSE OF AN EDITING ERROR, A RECIPE FOR MEYER LEMON PUDDING CAKE TART IN THE DEC. 4 FOOD SECTION WAS INCORRECT. THE TART RECIPE SHOULD HAVE CALLED FOR TWO STICKS OF BUTTER. ] 2 egg yolks

4 to 6 tablespoons heavy cream

Extra flour (for sprinkling)

1. Have on hand a 12-inch tart pan with a removable base.

2. In a large bowl, combine the flour and sugar and stir to mix. Add the butter, toss until coated, and then rub the butter into the flour with your fingertips or a pastry blender until the mixture resembles coarse meal.

3. In a small bowl, whisk together the yolks and 4 tablespoons of the cream, then pour these liquids onto the flour mixture. Gather the dough together with your hands to form large clumps. (Add up to 2 tablespoons more cream, if necessary, so that the dough comes together.)

4. Turn the dough onto a lightly floured surface. Dip the heel of your hand in flour and smear small sections of dough away from you, until all the dough has been used. Gather into a ball, flatten to a disk, and wrap in foil. Refrigerate for 2 hours.

5. Roll the dough on lightly floured surface to a 14-inch-diameter round that is 1/4-inch thick. Lift and turn the dough often as you roll to keep it from sticking. Place the dough in the tart pan, easing it into the sides so that it fits snugly in the pan. Use a sharp knife to trim off the excess dough. Chill the shell for 1 hour.

6. Set the oven at 350 degrees.

7. Line the tart shell with parchment paper and fill with dried beans or pie weights. Bake for 25 minutes or until golden. Cool, and remove the paper and beans. If pastry is moist on the bottom or not golden, return it unlined to the oven for a few more minutes.

FOR THE PUDDING CAKE
6 TABLESPOONS FLOUR
4 EGGS, SEPARATED
1 CUP SUGAR
1 1/2 CUPS MILK
1 CUP MEYER LEMON JUICE
(If you can’t find Meyer lemons at your local farmer’s market you can buy them directly from growers at http://www.buy-meyer-lemon.com/ )
2 TABLESPOONS GRATED MEYER LEMON RIND
4 TABLESPOONS BUTTER, MELTED AND COOLED
1/2 TEASPOON SALT
1 CUP CREME FRAICHE OR SOFTLY WHIPPED HEAVY CREAM
1. SET THE OVEN AT 350 DEGREES.
2. IN A LARGE BOWL, SIFT THE FLOUR. WHISK IN THE EGG YOLKS UNTIL BLENDED. WHISK IN CUP OF THE SUGAR, A FEW TABLESPOONS OF THE MILK, AND WHEN IT IS THOROUGHLY BLENDED, WHISK IN THE REMAINING MILK, LEMON JUICE AND RIND, BUTTER, AND SALT.
3. WITH AN ELECTRIC MIXER, BEAT THE EGG WHITES TO SOFT PEAKS. WITH THE MIXER RUNNING, SLOWLY ADD THE REMAINING CUP SUGAR IN A STEADY STREAM UNTIL THE EGG WHITES FORM STIFF PEAKS.
4. FOLD THE LEMON MIXTURE INTO THE WHITES IN THREE PORTIONS, JUST UNTIL THE BATTER IS BLENDED AND SMOOTH. 5. POUR THE FILLING INTO THE TART SHELL BUT DON’T LET IT COME ABOVE THE EDGE OF THE SHELL. (YOU MAY HAVE SOME BATTER LEFT OVER.)
6. BAKE FOR 35 TO 40 MINUTES, ROTATING THE TART HALFWAY THROUGH BAKING, OR UNTIL THE PUDDING CAKE IS PUFFED, SET, AND GOLDEN BROWN. THE TOP WILL HAVE CRACKED IN PLACES AND WILL FEEL SPONGY TO THE TOUCH. IT WILL SETTLE A BIT AS IT COOLS.
7. SERVE WARM OR AT ROOM TEMPERATURE. GARNISH WITH THE CREME FRAICHE OR WHIPPED CREAM AND CUT INTO WEDGES.

I’d make my summer pasta salad…

Toss together:
1/2 box of whole wheat pasta, cooked al dente
ZEST of 2 lemons
handful of chopped walnuts
2 Tbs capers (rinsed)
1 med zucchini (sliced, and blanched for 2 minutes in boiling water)
1/4 cup chopped sundried tomatoes
pinch of salt and pepper
Olive oil to moisten

This can be eaten @room temp…such as after you cook the pasta. OR chilled. Either way it’s fresh and delicious and SO not your traditional pasta salad

Lemon Thumbprint Cookies
Ingredients

•1-1/2 cups butter, softened
•3/4 cup powdered sugar
•1 teaspoon vanilla extract
•2 cups all-purpose flour
•1 cup cornstarch
•1/2 teaspoon salt
•1 cup walnuts, toasted and finely ground
•Lemon Curd*
Instructions
Using an electric mixer, beat butter and powdered sugar in a large bowl until light and creamy; add vanilla and beat to blend. Place flour, cornstarch and salt in small mixing bowl and mix with wire whisk; stir in walnuts. Add flour/nut mixture to butter mixture and mix just until blended. Refrigerate dough at least 1 hour.

Preheat oven to 325°F. Prepare baking sheets by lightly greasing with butter, or spray with non-stick vegetable spray. Drop cookie dough in rounded teaspoons one inch apart onto prepared pans. Press down center of each ball with thumb. Bake until light golden brown, 18 to 20 minutes. Cool completely. To serve, fill indentation with Lemon Curd. Makes about 65 Thumbprint cookies.

*Lemon Curd
•3 eggs
•1 cup sugar
•1/3 cup fresh lemon juice
•1/4 cup Darigold butter, melted
•1 tablespoon grated lemon peel
In the top of a double boiler, beat eggs and sugar. Stir in lemon juice, butter and lemon peel. Cook over simmering water for 15 minutes or until thickened. Immediately cover the lemon curd with plastic wrap to prevent a skin from forming and refrigerate. The lemon curd will continue to thicken as it cools. It will keep in the refrigerator for about a week. Makes about 1 cup.

Tip: To make the lemon curd lighter in texture and flavor, fold in a little whipped heavy cream once the curd has been thoroughly chilled.

i moved to nyc for a job at a cancer center and i absolutely hate the city… the only thing i like about the city is that i hate it so much i end up staying in and cooking… mind you, i don’t cook well, but i try… and your lemon curd look amazing! i’m not a big fan of lemons, but i’d use the tools to make orange curd!…

I just used my zester today and thought – I hate this thing!! I asked for one for Christmas but got some other fantastic kitchen essentials – eventhough my heart REALLY wanted a new zester. The first recipe I’d make if I won the package?! My super fantastic Weight Watchers-friendly Jumbo Orange Carrot Muffins. YUM-O. For that recipe I use a grater and a zester A LOT.

I would make some awesome Orange Bubble Bread! It is easy but oh, so yummy! Just defrost some Rhodes rolls in the refrigerator. Zest an orange and add it to some sugar in a small bowl. Melt butter in another small bowl. Using kitchen shears, cut the Rhodes rolls into 3rds and then drop them one at a time in the butter and then the orange sugar. Place them in a greased pan and cook in a preheated oven at 350 degrees until golden on top.

I have never owned a zester and always just use my box grater for anything that calls for lemon zest. It is rather dull and I usually just give up and make the recipe without the zest.

I would invite a bunch of friends over and have a crepe bar for all of our friends, I think. Since they come over all the time anyway, we would make it an all day thing and go from sweet breakfast crepes (I’m thinking homemade nutella and some jams/marmaledes) to savory lunch/dinner crepes featuring several different kinds of cheese and other mix-ins to sweet again for cream-filled and chocolate shaving topped crepes. Even if I don’t win I’ll probably do this anyway as it sounds like a ton of fun!

* Too many yummy recipes to choose from, but I’d have to pick my kids favorite:

Salmon (in a lemon brodetto with pea puree).
- Recipe courtesy Giada De Laurentiis -

- Salmon:
* 1/4 cup olive oil
* 4 (4 to 6-ounce) pieces salmon
* Kosher salt
* Freshly ground black pepper
- Lemon Brodetto:
* 2 tablespoons olive oil
* 1 shallot, diced
* 2 lemons, juiced
* 1 lemon, zested
* 2 cups chicken broth
* 1 tablespoon chopped fresh mint leaves
- Pea Puree:
* 2 cups frozen peas, thawed (about 10 ounces)
* 1/4 cup fresh mint leaves
* 1 clove garlic
* 1/2 teaspoon kosher salt
* 1/2 teaspoon freshly ground black pepper
* 1/2 cup extra-virgin olive oil
* 1/2 cup grated Parmesan

To make the Lemon Brodetto, warm the olive oil in a medium saucepan over medium heat. Add the shallots and saute until tender, about 7 minutes. Add the lemon juice, zest, and broth. Bring to a simmer, and keep warm, covered, over low heat.

To make the Pea Puree, combine the peas, mint, garlic, salt, and pepper in a food processor and puree. With the machine running, add the olive oil in a steady drizzle. Transfer the pea puree to a small bowl and stir in the Parmesan. Set aside.

To make the Salmon, warm the olive oil in a large, heavy skillet over high heat. Season the salmon pieces with salt and pepper. Sear the salmon until a golden crust forms, about 4 to 5 minutes on the first side. Flip the fish and continue cooking until medium-rare, about 2 minutes more depending on the thickness of the fish.

To assemble the dish, add the tablespoon chopped mint to the Lemon Brodetto and divide between 4 shallow dishes. Place a large spoonful of Pea Puree into the center of each bowl. Place a salmon piece atop each mound of Pea Puree. Serve immediately.

Lindy’s New York Cheesecake
Serves/Makes: 14 | Difficulty Level: 4 | Ready In: > 5 hrs

Ingredients:
1 cup flour, sifted
1/4 cup sugar
1 teaspoon grated lemon peel
1/2 teaspoon vanilla
1 egg yolk
1/4 cup butter, softened
5 (8 oz) pkgs cream cheese, softened
1 3/4 cup sugar
3 tablespoons flour
1 1/2 teaspoon grated lemon peel
1 1/2 teaspoon grated orange peel
1/4 teaspoon vanilla
5 eggs
2 egg yolks
1/4 cup heavy cream
frozen strawberries, thawed

Directions:
In medium bowl, combine flour, sugar, lemon peel and vanilla. Make well in center; add egg yolk and butter. Mix with fingertips until dough cleans side of bowl. Form into a ball and wrap in waxed paper. Refrigerate for one hour.

Preheat oven to 400 degrees F. Grease the bottom and side of a 9-inch springform pan. Remove the side from the pan. Roll one third of dough on bottom of springform pan; trim edge of dough. Bake 8 – 10 minutes, or until golden.

Meanwhile, divide dough into 3 parts. Roll each part into a 2 1/2″ strip, 10″ long. Put together springform pan, with the baked crust on the bottom. Fit dough strips to side of pan, joining ends to line inside completely. Trim dough so it comes only 3/4 of the way up side of pan. Refrigerate until ready to fill.

Preheat oven to 500 degrees F. Make Filling: In a large bowl of electric mixer, combine cheese, sugar, flour, lemon and orange peel, and vanilla. Beat at high speed, just to blend. Beat in eggs and egg yolks, one at a time. Add cream, beating just until well combined. Pour mixture into springform pan. Bake 10 minutes. Reduce temperature to 250 degrees F. and bake 1 hour longer.

Let cheesecake cool on wire rack. Glaze top with strawberries. Refrigerate 3 hours or overnight. To serve, loosen pastry from side of pan with spatula. Remove side of springform pan. Cut cheesecake into wedges.

I’d make some Stuffed Shells using the recipe from Emeril. I would use the box grater for the fresh mozzarella (the one in liquid) and the “fine” paddle grater for the parmesan cheese.

I have a super yummy recipe called Lemony Shells with Edamame. It’s super simple and easy to make, but it calls for juice and zest of 1 lemon, which will be even easier to make once I don’t have to use a cheese grater and scrape all the zest off…

I make a mediterranean pasta salad, using whole wheat pasta (the Rotini seems to work best), tomatoes, red onions, red pepper, cucumber, zucchini, yellow squash, frozen chopped spinach (thawed and all the liquid squeezed out), feta cheese, parsley, oregano, mint and a vinaigrette using lemon juice and olive oil. I also zest the lemons and use them in the salad, since the peel has SO much flavor!
