Mini Desserts…

Yesterday I made mini desserts which consisted of three types of cheesecakes and brownie bites.

I searched the internet for quite some time looking for a great brownie recipe. I decided on a recipe that claimed to yield a deep dish brownie because I really do not enjoy the thin variety. I think brownies, like chocolate chip cookies are something that come down to personal preference. Some like them chewy and thick, others enjoy them thin with crispy edges. Whatever your preference is I am sure there is a brownie recipe out there for you.

Now on to my one of my favorite desserts…cheesecake. I love cheesecake, I mean I really love cheesecake. It is usually my go to dessert for pot-lucks, dinners, etc. I think I like cheesecake so much because it is easily adaptable to all four seasons and recipes can be found in such a wide array of delicious flavors. I chose to make these desserts in my mini muffin pan because first of all they are adorable, but they are also super convenient to transport as well as eat! Enjoy!

*Note- for the cheesecake recipe I used a traditional graham cracker crust, not vanilla wafers as the recipe states. For the brownies I only used two eggs instead of three.

Beautiful picture! I love the mini cheesecakes, then you don’t feel bad having more than one, but can taste the different flavours as well.
I’m still on the hunt for the “perfect” brownie as well, but I’m hunting for GF now. I tried one the other day, and it was REALLY good.

This so wierd! This morning I was on AR looking at the photo vote, I actually saw this photo there (was one of the only 2 I actually thought were good!). Then on FoodGawker I see this photo and said HEY! LOL. This is an awesome photo of your mini cakes!

I love me some mini desserts because then you don’t feel so bad eating more than one. I do have a favorite brownie recipe but I don’t know if it would work as a mini. In fact it makes a half sheet pan. It’s by Ina Garten and the recipe is on my site.

I made these for a Christmas function at my church today (just the cheesecakes). I used this cranberry sauce as a festive topping and it was a hit! Obviously it makes way more than needed for the cheesecakes but it would be great for a double batch or just a great use for leftover cranberry sauce!

And btw, I have never liked cranberry sauce but this stuff was amazing. It was the first time I ever ate cranberry sauce with my thanksgiving turkey! YUM!
