We eat a lot of chicken around here and this summer we’ve certainly developed an affinity for Beer Can Chicken, or Beer Butt Chicken – whatever title floats your boat. It’s simple, incredibly flavorful and makes a great weekend meal. We typically make two small chickens so we’ll have plenty of leftovers to use in other meals throughout the week. The leftover chicken is perfect for a quick chicken noodle soup, chicken salad and of course – barbecue chicken pizza.

Not only are we really into chicken, we also love homemade pizza. There’s nothing better than a counter filled with a variety of pizza toppings and a bowl overflowing with a batch of homemade pizza dough. It’s a great way to get the family involved in cooking and everyone can make their own pizza, so there aren’t any topping wars – which is always a bonus.

One of our favorite pizza creations is this Barbecue Chicken Pizza. We use our favorite store bought barbecue sauce, leftover chicken and plenty of cheese to create a wonderfully flavor pizza that certainly rivals any of our local pizza joints.

If you don’t have leftover chicken, pick up a a rotisserie chicken from your local market to save yourself some time, or simply bake or grill up a couple of chicken breasts.

Whether you’re looking for a quick lunch or a great pizza to accompany your Friday night movie, this Barbecue Chicken Pizza is a great twist for a weekend classic.

Barbecue Chicken Pizza

Ingredients:

1 store bought pizza crust or refrigerated crust (I used 1lb of homemade crust)
1/2 cup barbecue sauce
1 cup cooked and shredded chicken
1/2 cup thinly sliced red onion
1 orange bell pepper; diced
1-3/4 cups (7 oz.) Sargento® Monterey Jack Shredded Cheese
Chopped cilantro; to taste (optional)

Directions:

1. Preheat oven to 475 degrees F. Place pizza crust on foil-lined baking sheet.
2. Spread barbecue sauce on pizza crust. Add shredded chicken, onion, and bell peppers on top of the barbecue sauce. Top with cheese.
3. Bake 12 to 15 minutes or until crust is deep golden brown. Cut into squares; garnish with cilantro.

    Homemade pizza is a favourite in this house. I make the dough and prepare all the toppings, then everyone puts toppings on their own pizza. And the leftovers are great for lunchboxes the next day

    Mmm I never had BBQ pizza until I moved to Memphis. But I rarely make it myself. I actually don’t even go out for BBQ often either, I think it’s just because it’s always around and doesn’t seem special anymore haha. But I love making pizza, there are endless topping options! My non-creative day pizza is green peppers and pepperoni.

    We love BBQ Chicken pizza here too! Try adding roasted red potatoes (diced or wedges) under the cheese and then topping with toasted cashews (chopped). I know it sounds strange, but we had it like this at a friend’s house and the additions add amazing texture and flavor!
