With Easter just a couple of days away, I thought I’d post a super cute and simple idea for Cadbury Creme Egg Cupcakes. I’m a sucker for anything miniaturized, so when I laid my eyes upon mini Cadbury Creme Eggs at Target I immediately threw them into my cart. At that moment I was unsure if I was going simply consume them until I got a stomach ache or create an Easter themed dessert.

After tossing around a few ideas, I decided to make cupcakes. I knew I wanted to bake mini egg into the center, because seriously can it get any better than a Cadbury Egg baked into a cupcake? I think not. Then I experienced a brief moment of brilliance and thought it would be pretty darn adorable and festive to pipe the frosting to mimic an egg.

I don’t really have a recipe for you, this is just more of an method on how to execute the idea.

Cadbury Creme Egg Cupcakes

Ingredients:

  • 24 paper cupcake liners
  • Batter for 24 cupcakes. Box mix works fine or simply use your favorite chocolate cupcake recipe, it’s your call.
  • 48 Mini Cadbury Creme Eggs (24 frozen) - You’ll use the frozen ones inside the cupcake batter. Freezing the eggs keeps them from completely vanishing inside the baked cake.
  • 1 batch of buttercream frosting
  • yellow dye
  • Large Round piping tip or snip the end off of a piping bag.

Directions:

  1. Scoop batter into paper liner 2/3 of the way full. Place one frozen Mini Cadbury Creme Egg into the middle of each cupcake. Use a spatula to spread the batter over the egg.
  2. Bake according to the recipe you are using. Allow cupcakes to cool completely.
  3. While your cupcakes are cooking, make your buttercream. My favorite recipe can be found within this Fundamentals Buttercream Frosting Post.
  4. Remove about 1 cup of buttercream from the mixing bowl and dye it yellow.
  5. Assemble your piping bag fitted with a large tip and pipe a large circle around the perimeter of the cupcake.
  6. Fill in the center of the circle with the yellow buttercream and top with a Mini Cadbury Cream Egg.

Wow! I just finished making these, they are great. I didn’t put the eggs on top, and my yellow frosting was not quite the right color, but these are a hit!!!! Great.

Found mine at Walmart…over by the Easter baskets..not by the candy.

  3. Jacqui says:

Did you use gel or liquid food coloring for the yellow part?

  4. Heather says:

I tried these tonight…froze the mini eggs for a few hours and all….and they still disappeared during baking, I just have chocolate cupcakes with a crunchy carmalized base. :( What did I do wrong??

    1. Lynda says:

Heather – the same thing happened to me :(

I made these tonight and the same thing happened to me! But my cupcakes arent just chocolate – the chocolate from the egg seems to have melted making the middles really soft and gooey (not in a good way), and the creme part has hardened on the bottom. :( I don’t know what went wrong!

Same thing happened to me. Twice!

I’ve just been to Target and Kroger, and can’t find them! :( Anyone know if any mass-retailers are selling them this year? I can only find 4 on Amazon. Anyone who onows, feel free to email me at awkennon (at) hotmail.com. Thanks a million!

      Anne-
I just picked some up at Target this afternoon, I have also seen them at my local grocery store (Kroger). Sorry you are having such a hard time finding them.

GAH! Ok, I’ll maybe try a different Target…I know they sometimes carry different products at different stores, even within the same town. I’m dying here, since I’ve had my heart set on these darn cupcakes for weeks now!

    3. Lisa says:

Sorry I replied down below…I found mine at Walmart…by the Easter baskets and grass..not by the candy. Hope that helps.

I found some at CVS yesterday. SO expensive, though!
I know they won’t be as cute, but would the more solid chocolate eggs work, too? Like the Butterfinger eggs or the cookie & cream eggs?

    Hi Jamie

Can you please tell the cupcake recipe you used? Thanks!

    1. Jamie says:

      Faye-
I used this recipe – but you can pretty much use whatever recipe is your favorite. Thanks for stopping by!

  7. Katrina says:

My fave chocolate cake recipe has a runny batter…will the egg stay in the middle even if the batter is runny? Thanks so much for sharing!

    1. Jamie says:

      Katrina-
I used a really thick cake batter for this recipe, I don’t think the egg will stay suspended in a thinner batter.

These are so cute! Makes me wish I could still eat Cadbury eggs…unfortunately Hershey took them away from me last year by slapping their peanut/nut warning on them. I may have to make these cupcakes though…I bet they are even better than the candies anyway!

So cute! I always look forward to the time of year when Cadbury eggs start to appear.
