Banana Whoopie Pies

Yield: 12 whoopie pies

Prep Time: 20 minutes

Cook Time: 12-15 minutes

Ingredients:

2 cups all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
8 tablespoons (1 stick) unsalted butter, softened
1/2 cup granulateD sugar
1/2 packed light brown sugar
1 large egg
2 ripe bananas, mashed (about 1 cup)
1/4 cup sour cream
1 1/2 teaspoons vanilla extract

For the Filling

2 cups mascarpone at room temperature
4 tablespoons sugar

Directions:

1. Adjust oven racks to lower-middle and upper-middle positions and preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.

2. Sift together the flour, baking powder, baking soda, salt, and cinnamon into a medium bowl; set aside.

3. In the bowl of a standing mixer fitted with the paddle attachment, beat butter with sugars on medium-high speed until light and fluffy, about 3 minutes. Stop mixer, scrape down the bowl and beater, and beat in egg on medium speed until combined. Beat in banana, sour cream, and vanilla until combined. Reduce the speed to medium-low and add flour mixture in batches until completely combined, scraping down the sides of the bowl as necessary.

4. Transfer the batter to a pastry bag or a resealable plastic bag fitted with a Wilton Round Tip #2A pastry tip. Pipe six 2 1/2-inch round mounds onto each pan, placing them 3 inches apart. Bake until light golden, 12-15 minutes, rotating pans from top to bottom and from front to back halfway through.

5. Remove pans from oven and slide the parchment sheet of cookies onto a wire rack to cool completely. Line baking sheets with fresh paper and repeat process with remaining batter.

6. Meanwhile, make the filling. Combine the mascarpone and sugar in a small bowl and mix with a rubber spatula until the sugar is thoroughly incorporated.

7. Once the cookies are cool, spread 2 tablespoons of the filling onto the flat side of 1/2 of the cookies. Top with the remaining cookies and arrange on a platter in a single layer. The whoopie pies can remain at room temperature up to 3 hours. To store, cover with plastic wrap and refrigerate.

Notes:

- I piped the batter into a whoopie pie pan.
- Can't find mascarpone? This recipe is equally as delicious with cream cheese frosting.

I want to throw a lucky-themed party. The idea of lucky is something that has grown to be so special to me. I have a tattoo on my wrist that says lucky, and it serves as a reminder to be thankful for my blessings. My boyfriend and I are both voice majors in college and when we were younger we would sing Jason Mraz’s “Lucky” as a duet for different shows. I also had a dog named Lucky. Anyway, the idea of lucky is something that is so important to me that I always want to celebrate it! But I have a tough time tying things together. Four leaf clovers, lady bugs, pearls, and other things that mean luck in different cultures could all be celebrated together! Sorry for the long post. Love My Baking Addiction and Amy Atlas!

Just gave a 7th birthday party with a Lego Ninjago theme. I found tons of Lego stuff and tons of Lego Star Wars stuff but the Ninjago theme is still fairly new. Next up, a party for the five year old. He is still deciding about Lego Ninjago or Star Wars so we’ll see what happens.

For hubby’s work making up Monkey/Banana theme baskets’ I am so making these banana whoopie pie !!! My daughter is helping doing a baby shower and the theme is camoflauge HELP !! We are having trouble finding camo all we have is ribbon and nuks & bottles. The parents dont know the gender so she is trying to keep things green camo. I told her go pink & blue camo but her friend helping her is not into that. Any ideas would be greatly appreciated.

You should plan everything around finding clues for the special birthday celebration. the invitation could be a little box with clues( like a map) as an starting clue for getting to the suspicious location( your house ).. and then maybe for favors, plastic magnifying glass, plastic dark glasses, a suitcase( those cute paper ones to help celebrate the birthday boy. Labeled the food as mystery things.. maybe watch Tom Cruise Mission Impossible movie to get some ideas…

We will be on vacation, at a rental house on Torch Lake, Mi, with our kids and families. My husband will be turning 62 (yea Social Security) and will have heart surgery the day after his birthday. I want to do a surprise party, (as it is a vac, I will not be able to bake), maybe a fishing theme, as he plans on learning fly fishing in retirement. Anyway, just something special since he is so special.

My boyfriend and I will be planning a 1960′s themed Christmas party this year! I would love to have everyone dressed in 1960′s fashion. The house would be decorated with retro ornaments and even a white Christmas tree. The food would be vintage recipes… down to the classic jello-mold. It’s going to be soooo much fun!
