Bite-Size Tacos

Since tomorrow is the Super Bowl, I figured I would squeeze in one last post for all of you party planners out there. Everyone loves finger foods and what Super Bowl spread is complete without a taco recipe? Typically I will make my little bro’s taco dip (which I totally need to post at some point), but this time, I thought I would mix it up a little bit! This recipe is simple and the perfect size for game day grub.

Although this is not really a recipe, it is still worthy of posting because a.) they are tasty and b.) they are seriously adorable! I simply sauteed onion, browned lean ground beef and added in some homemade taco seasoning. I then placed spoonfuls of the seasoned ground beef into Tostitos Scoops and added all the necessary fixings. My favorite taco condiments include lettuce, Mexican shredded cheese, sour cream, hot sauce and green onions. The flavor combination are endless, try adding tomatoes, salsa or guacamole to really liven these up! Have a great Super Bowl Sunday full of food, friends and of course…football! Bite Size Tacos

Ingredients:

1 tablespoons olive olive
1/2 medium onion; chopped
1 pound lean ground beef
1 packet taco seasoning (or use the recipe link above)
Tostitos Scoops

Optional Taco Condiments
shredded cheese
shredded lettuce
sour cream
salsa
hot sauce

Directions:

1. In a large skillet over medium heat, add olive oil and sautee the chopped onion until soft.

2. Add in ground beef and cook until browned and thoroughly cooked.

3. Add taco seasoning and follow package directions.

4. Assemble the meat and condiments into the scoops and serve.

I can't wait my oldest granddaughter signs the papers on her house 6/27/2011. I told her about the granola bar recipe I was looking @ when I panned down and saw this 1. She needs recipes for her new house and this looks and sounds great for her house warming party. I tried to email it to her but my computer is acing funny with all the storms, so I will print and bring her several of your recipes. The photos make the recipes so easy to love. Thanks

I made then as promised with turkey because we don't eat red meat. Absolutely delicious! Took me two hours to prep, cook, and prepare them though.
