Spring has sprung, and with it, the Spring holidays are flying by. Mother’s Day is fast approaching, and I know you want to have a ready plan to celebrate that special lady in your life.

I thought I’d help out by putting together some simple and delicious recipes that will be perfect for your Mother’s Day brunch or barbecue. First on the menu is Fruit and Cheese Kabobs with a Yogurt & Honey dip. With just five ingredients and minimal prep time, they’re a great portable and colorful party appetizer.

Brian actually put these together for me while I was photographing another recipe. He did a pretty great job…it’s a good thing he’s a little meticulous like me…I actually caught him inspecting the berries for flaws and checking the lengths of the cheese chunks to make sure they were even!

The sweet strawberries and juicy grapes blended harmoniously with cubes of Colby-Jack Cheese, but I can’t wait to try other combinations. The culinary possibilities here are truly endless: have fun playing around with different cheeses and fruits to create seasonal kabobs for every party theme. How cute would strawberry, blueberry and mozzarella kabobs be for a Fourth of July barbecue? Pretty darn cute.

I’ve yet to meet someone that didn’t love cheese or fruit, so I’m pretty sure these kabobs will please a crowd just as much as they will your mom on her special day. Total bonus that clean-up time is virtually nil, leaving you more time to hang out with the fam. Just remember to snip off any pointy ends to the kabob skewers before handing over to little ones.[/donotprint]

Fruit and Cheese Kabobs

Ingredients:

8 Sargento® Reduced Fat Colby-Jack Cheese Snacks
24 green seedless grapes
24 small strawberries
4 oz. low fat vanilla yogurt
honey (optional)

Directions:

1. Cut each cheese snack crosswise into 3 pieces. Alternate on skewers with grapes and strawberries.

2. Drizzle honey over the vanilla yogurt and serve as dip for kabobs.

    I really like the idea of adding cheese to fruit skewers….I wouldn’t have thought of that, but it’s a great way to add some variety! I’ll keep it in my for the next time that I need an appetizer.
