Hey there! I hope you are all staying cool through this ridiculous heat wave! I’ve decided to stay inside, sip cherry limeade, and ponder why my produce seems to go bad so quickly! Fun times, right?
This is just a quick note to let you all know that I’m guest posting over at Bluebonnets & Brownies today while Amber is taking a little time away from her blog. These Lime-Coconut Cupcakes were the product of me purchasing a HUGE bag of limes from Costco and having nowhere to store them. They are fun, delicious and the perfect flavor combination for summer.

Shoot!! Now you’ve got me singing that song I was singing the other day when I made those Chewy Lime Coconut Sugar Cookies and I’d just gotten it out of my head!! I can see Kermit the Frog singing, “You put the lime in the coconut and drink it all up…”

These look awesome! My boyfriend loves lime and coconut, so I will definitely be bookmarking these to make for him at some point. I love the look of the pink and brown cupcake wrappers together.
