It may seem kind of strange that one of my absolute favorite desserts to make are rice krispie treats.

Not only are they super simple, they’re also incredibly versatile and a great recipe to get your little ones into the kitchen.

I mean, hello, there are marshmallows involved!

Plus, they are always one of the first things to fly off the dessert table at any potluck, party or bake sale.

PINK RICE KRISPIE TREATS

Part of raising a little one who is a total “girly” girl is that if there is an opportunity to make something pink or purple, or adorn it with anything pink or purple, you take it.

Of course, springtime is the perfect opportunity to take advantage of this, with strawberries everywhere. I’ve made Lemon Sugar Cookie Cups with Strawberry Frosting to appease Elle’s love of all things pink, and this year I wanted to find a way to make pink rice krispie treats.

Luckily, a new strawberry-flavored Rice Krispies cereal came out this year and made Elle’s and my pink rice krispie treat dreams come true.

Strawberry Rice Krispie Treats are the perfect simple dessert for Spring. Fluffy vanilla buttercream and fresh strawberries take them to the next level!

MAKING STRAWBERRY RICE KRISPIE TREATS

To make Strawberry Rice Krispie Treats, I took a cue from my Birthday Marshmallow Cereal Treats. After all, what is more perfect than fluffy buttercream frosting on top of a bakery-sized rice krispie treat?

To make Strawberry Rice Krispie Treats, I grabbed a box of Strawberry Krispies cereal, a couple of bags of Campfire® Mini White Marshmallows, and some freeze-dried strawberries.

Freeze-dried strawberries are pretty easy to find at most grocery stores these days (I pick up mine at Trader Joe’s), but you can always order them on Amazon if you’re having trouble finding them near you.

Strawberry Rice Krispie Treats are the perfect simple dessert for Spring. Fluffy buttercream and fresh strawberries make them even more amazing.

I’ve turned to Campfire® Marshmallows countless times over the past few years whenever I needed the perfect marshmallows for my recipes, just like with these Strawberry Rice Krispie Treats because, in my opinion, they are simply the best marshmallows on the market.

Strawberry Rice Krispie Treats are simple and totally delicious for spring! Ooey, gooey and loaded with strawberry flavor!

We even created a Marshmallow Madness Pinterest board where we’ve pinned loads of delicious ooey-gooey marshmallow recipes, just like Strawberry Rice Krispie Treats and some of my other favorite cereal treats including Brown Butter Rice Krispie Treats and Berry Cereal Treats.

To make my little girl extra happy, I topped these pink treats with fluffy buttercream frosting and some fresh strawberries. You could even cut them into heart shapes instead of squares if you want to make them extra special for a little love.

Strawberry Rice Krispie Treats are a great way to celebrate spring or any day that deserves a little bit of pink, frosting, and strawberries. So any normal Thursday in our house!

Strawberry Rice Krispie Treats

Strawberry Rice Krispie Treats

Yield: 9 large bars
Prep Time: 20 minutes
Total Time: 20 minutes

Strawberry Rice Krispie Treats are festively pink for Valentine’s Day and full of fun strawberry flavor. Top them with pillowy buttercream frosting and sprinkles for an extra-special touch.

Ingredients

  • 6 tablespoons unsalted butter
  • 2 10.5-ounce packages Campfire® Mini-Marshmallows, divided use
  • 9 cups Strawberry Rice Krispies
  • 1 ounce freeze dried strawberries, roughly chopped
  • 1/2 cup unsalted butter, room temperature
  • 1 1/2 cups powdered sugar, sifted
  • 1 1/2 teaspoons pure vanilla extract
  • 1-3 teaspoons milk
  • Fresh strawberries for garnish

Instructions

  1. Line a 9 x 9-inch baking pan with parchment paper or foil and spray with nonstick cooking spray.
  2. In large pan, melt butter over low heat. Set aside 1 1/2 cups marshmallows. Add the rest of the marshmallows to the pan and stir until completely melted.
  3. Gradually add crisped rice cereal; stirring until well coated. Fold in the reserved 1 1/2 cups of marshmallows and freeze dried strawberries until thoroughly incorporated.
  4. Using a buttered spatula or clean hands to firmly press the mixture into the prepared pan. Cool completely.

FOR THE BUTTERCREAM

  1. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat butter on medium-high speed for about 5 minutes.
  2. With the mixer on low speed, slowly add in powdered sugar, and continue beating until well blended.
  3. Add in vanilla, and 1 teaspoon of milk. Mix on low speed until incorporated.
  4. Beat at high speed until frosting is smooth and fluffy; about 4-5 more minutes. If your frosting is too thick, gradually add a little more milk, 1 teaspoon at a time until you reach the desired consistency.
  5. Spread or pipe frosting onto cooled marshmallow cereal treats and top with fresh strawberries.

Notes

  • I cut these Strawberry Rice Krispie Treats into 9 large pieces. I then piped the buttercream in a zig-zag pattern using a Wilton 2a piping tip.
  • If you want the bars to be thinner, I'd suggest using a 9 x 13-inch pan instead of a 9 x 9-inch pan.
