I love grocery stores, go figure, right? I love wandering through the aisles, checking out random spices, olive oils and fun new products.

However, I loathe those mid-week quick trips to pick up odds and ends and I HATE putting groceries away. Last week, I asked Brian to make a mid-week trip to pick up some pecans and oranges; he came home with walnuts and oranges.

Now, if you have read my blog for a while, you may remember that Brian claims to be “allergic” to walnuts. Is his world, being “allergic” means they bother his tongue and mouth, so they have been banished from my baking cupboard. Personally, I think this “allergy” is a bunch of malarkey. 

Did I just say malarkey? Yes, indeed I did. Hogwash also has a nice ring to it, but we’ll stick with malarkey for now.

Back to the walnuts…he bought them, so I used them {his fault, right?}; this made him exceedingly cranky. He likes to be the first to test my baked creations to make sure they are “up to standard” before he takes them to his ever-so picky coworkers…kidding, they eat ANYTHING!

To sum it up, Brian did not taste these Walnut Chocolate Chunk Blondies, so I had to. My verdict? They were good, not amazing…I thought they needed something, but could not put my finger on it. More butter? More Sugar? More vanilla? No walnuts…MORE walnuts? If you make them and figure it out, please enlighten me! Walnut Chocolate Blondies

Walnut chocolate blondies are a delicious and easy bar dessert. They're perfect for parties or tucked into lunch boxes.

Ingredients

  • 10 tablespoons unsalted butter
  • 2 cups light brown sugar
  • 1 teaspoon pure vanilla extract
  • 3 eggs beaten
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • Large pinch salt
  • ½ cup chopped walnuts
  • 1 cup semisweet chocolate chunks

Instructions 

  • Preheat oven to 350°F. Line an 8x11-inch baking tray with foil, leaving some overhang on the sides.
  • In a large, heavy pan, gently melt the butter. Add the sugar, stir well, and remove from the heat. Let cool for a minute, then add the eggs and vanilla, stirring well.
  • Sift the flour, salt, and baking powder over the butter/sugar/egg mixture. Stir only until thoroughly blended, but don’t beat or overmix. Fold in nuts and chocolate.
  • Pour the batter into the prepared pan.
  • Bake for 25 minutes until just firm.
  • Cool for a while in the baking tray, then lift the bars out using the foil, transferring to a wire rack to cool completely. Remove the foil and cut into squares.

    These look so yummy! I would definitely prefer pecans over walnuts though….the very reason I don’t send my husband to the store!! It never ends well!!

    Hubby’s favorite is Blondies with nuts but no chocolate. I love the chocolate. I am thinking of splitting the batter between two bowls and add chocolate to mine. We would both be happy. You make these look so rich with the chocolate.

    I love the time i spend in supermarkets too, that is if i am not in a hurry, i took look to the spices and specail things they ahve etc…. The blondies look so so yumm. Bookmarking them.

    OMG This is too too hysterical! MY husband claims he’s allergic to walnuts, too, that they bother his mouth! And he refuses to eat anything with walnuts (mostly). I think it is all a put on, too, only to get out of eating what he doesn’t want to eat. But then I’d say “more of these fabulously delicious blondies for me!” and fabulously yummy they do indeed look!

    As an aside about food allergies – I’m allergic to LOTS of different kinds of food (it’s pretty sad…) and it started with my mouth and tongue being really sensitive. I would eat an apple and my mouth would start to swell a little and itch. I told my family but as a kid, no one believed me. Finally, I found my way to an allergist, who did a blood test, and confirmed the allergies I already knew were there. Apparently tongue and mouth beginning to swell is the beginning of what could be a severe allergy – I went home with an epi pen and instructions to stay away from all those foods!

    So I say that all to encourage you to go easy on him :) It sucks when people don’t believe you about allergies but it sucks even more having to stay away from yummy foods!

    Walnuts are banned in my house too! I love they way they taste in all things baked, but alas…
    I use dried fruit instead. I may try this recipe with dried cranberries!

    I would probably add some orange zest, it’s a great flavor match for both the chocolate and the walnuts.

    I LOVE going to the food store, but am just like you that I hate hate HATE going midweek. i do the same thing to my husband, but I make sure I tell him ten times what I need and he’ll still call me. haha. Love your blondies!

    I like ‘hogwash.’ :) My husband claims to hate things like ricotta cheese, yet he has eaten it on numerous occasions. I love reminding him of this. :) These look fantastic!
