Frozen s’mores take all the flavors you love and turn them into a cold, refreshing treat that’s perfect for enjoying on a hot summer day!
If you’ve been around here for a while, you know that I love all things s’mores.
There’s just something about the combination of chocolate, graham crackers, and marshmallows that I can’t get enough of, especially during the summer.
Whether it’s s’mores dip, easy s’mores brownies, s’mores pie, or giant s’mores cookies, I love it all.
But we’ve been having a heat wave here this week and I’ve been craving frozen desserts. I just want to sit in the air conditioning and eat something cold and refreshing. Zero heat involved.
The answer? Frozen s’mores.
What are frozen s’mores?
Frozen s’mores take all of the flavors we love in traditional s’mores but turns them into a frozen treat similar to an ice cream sandwich.
I got the idea when I saw a reel from spread.the.grub on Instagram. Her version was quite a bit different from what you see here, but the idea was stuck in my brain and just wouldn’t leave.
So I grabbed some of my favorite ingredients and got to work.
These frozen s’mores have graham crackers on the outside, two layers of chocolate, and a mix of cool whip and marshmallow fluff on the inside.
You can throw them together in about 15 minutes. Let them set in the freezer for a few hours and they’re ready to cut and enjoy — no campfire required.
How to make my frozen s’mores
This recipe is so easy to make and is a great way to get your kids involved in the kitchen. They’ll love helping you assemble these frozen s’mores – and eat them later!
Ingredients you’ll need
To make this recipe, you will need:
- About 20 full sheets of graham crackers
- 1 (8-ounce) container frozen whipped topping, thawed
- 1 (7.5 ounce) jar marshmallow fluff
- 1 (11.5-ounce bag) Ghirardelli milk chocolate chips
- 1 teaspoon flaky sea salt
You will need about 20 of the full rectangle sheets of graham crackers for these s’mores. We’ll break some of them apart on the perforations when fitting them into the pan, but start with 20 full sheets.
Marshmallow fluff and marshmallow creme are interchangeable here, so use whatever brand you like best.
You don’t have to use Ghirardelli chocolate chips in these s’mores — that just happens to be my preferred brand of chocolate chips. Use whatever you have on hand and like best!
Don’t skip the flaky sea salt here. It takes these frozen s’mores from good to great.
Making this recipe
This frozen s’more recipe is made in a 9×13-inch pan. Line the pan with parchment paper or foil, leaving an overhang so that you can easily lift the s’mores out of the pan later.
Arrange half of the graham crackers in the bottom of the pan. You will need to break some of the crackers along the perforation lines to get them to fit, as you can see in these photos.
In a large mixing bowl, fold together the whipped topping and the marshmallow fluff until well combined. Set this aside.
Add the chocolate chips to a microwave-safe bowl. Microwave at 50% power for 90 seconds, then stir well. Continue to microwave at 50% power in 30-second increments, stirring after each, until the chocolate is smooth.
Spread half of the melted chocolate onto the graham cracker layer. Sprinkle evenly with the sea salt.
Spread all of the marshmallow mixture on top, followed by the rest of the melted chocolate. Top with the remaining graham crackers, again breaking them as needed to fit into the pan.
Cover the pan and freeze for at least 4 hours.
When you’re ready to serve, lift the frozen s’mores out onto a cutting board and slice into squares. Serve immediately.
Storage tips
If you are making these frozen s’mores several days before you plan to serve them, leave them in the pan. Cover with a layer of plastic wrap pressed onto the top of the s’mores, then cover the tightly in heavy-duty foil.
Once the s’mores have frozen through, you can cut them and wrap them individually. Then you can grab one whenever you need a little snack!
Slice the s’mores into bars with a sharp knife. Wrap each frozen s’mores bar in plastic wrap, then place in a zip-top freezer bag.
Store in the freezer for up to a month.
Recipe variations
I typically make this recipe with standard marshmallow fluff, cool whip, honey graham crackers, and milk chocolate chips. But there are lots of ways you can adjust the ingredients for dietary restrictions.
Feel free to use gluten-free graham crackers, vegan marshmallow creme, non-dairy whipped topping (such as CocoWhip), and/or dark chocolate/dairy-free chocolate chips as needed.
You can also swap out honey graham crackers for chocolate graham crackers for a bit more chocolate flavor.
You could even drizzle some salted caramel sauce on top of the chocolate layers for a salted caramel twist!
Frozen S’mores
Ingredients
- About 20 full sheets of graham crackers
- 8 ounces frozen whipped topping thawed
- 1 jar marshmallow fluff 7.5 ounces
- 1 bag milk chocolate chips 11.5 ounces (I prefer Ghirardelli)
- 1 teaspoon flaky sea salt
Instructions
- Line a 9×13-inch baking pan with parchment paper or foil. Leave a little extra overhang on the short sides to help you remove the frozen s’mores from the pan.
- Add the graham crackers in an even layer in the bottom of the pan. You will have to break a few along the perforations to fit them in correctly.About 20 full sheets of graham crackers
- In a large bowl, mix the whipped topping and marshmallow fluff until combined. Set aside.8 ounces frozen whipped topping, 1 jar marshmallow fluff
- Place the chocolate chips in a microwave-safe bowl. Microwave the chips at 50% power for 90 seconds. Stir and continue to microwave at 50% power in 30-second intervals, stirring after each interval, until the chocolate is smooth.1 bag milk chocolate chips
- Spoon half of the melted chocolate onto the graham crackers and spread into an even layer. Sprinkle evenly with the flaky salt.1 teaspoon flaky sea salt
- Next, add all of the whipped topping mixture and spread into an even layer. Follow with the remaining melted chocolate and finally another layer of graham crackers.
- Cover the pan with foil or press and seal and place in the freezer for at least 4 hours.
- When ready to serve, use the foil or parchment overhang to pull the frozen s’mores from the pan. Cut into squares and serve immediately.
