Almost all of my friends with young kids have the same problem we do: they go through berries like nobody’s business.

Seriously, these kids can eat a carton of fresh berries in one sitting. In this economy?!

So pretty much any recipe that includes strawberries is a big hit around here. These strawberry brownies use a strawberry cake mix paired with strawberry jam and fresh strawberries to get their berry flavor, so I can give my toddler a dessert that she loves and still have fresh berries leftover for her to devour later.

What are strawberry brownies?

Ok, let’s get this out of the way: strawberry brownies don’t have any chocolate in them. They’re not “classic” brownies like salted caramel brownies or oreo brownies.

I know, I know. They’re called “brownies” because the texture of these bars is reminiscent of the texture of a chewy, cakey brownie, kind of like apple cider blondies or snickerdoodle blondies.

I don’t know why the internet all agreed to call these strawberry brownies instead of strawberry blondies, but sometimes we just go with things, ok?

No matter what you choose to call them, these bars are made with a strawberry cake mix and fresh strawberries and are topped with a lemony strawberry glaze. They are chewy and slightly cakey and perfect for any time you need a quick and easy dessert to take to a party.

The pretty pink color also makes them perfect for Valentine’s Day and baby showers or spring holidays such as Easter or Mother’s Day. Strawberry lovers will love this one!

How to make these easy strawberry brownies

This is the kind of easy recipe that anyone can make, even kids!

Ingredients you’ll need

You only need a handful of simple ingredients to make this strawberry brownie recipe:

  • 2 large eggs
  • ⅓ cup vegetable oil
  • ½ teaspoon pure vanilla extract
  • 1 (15.25 ounce) strawberry cake mix
  • ½ cup diced fresh strawberries

Some versions of this dessert leave out the fresh strawberries. I like including them for a little extra fresh strawberry flavor. But feel free to omit them if you don’t have any on hand!

You could also swap the diced strawberries for white chocolate chips!

I like to top these strawberry brownies with a lemony strawberry icing. For that, you will need:

  • 1 cup powdered sugar
  • 2 tablespoons strawberry jam
  • 1/2 teaspoon lemon zest
  • 1 tablespoon lemon juice

If you’re out of powdered sugar, you can learn how to make powdered sugar in minutes and save yourself a trip to the grocery store.

When measuring powdered sugar, use the same fluff, scoop, and sweep method as when you are measuring flour. This will help your recipes, whether it’s this glaze or homemade buttercream frosting, turn out perfect every time.

Making this recipe

One of the nice things about this recipe is that you don’t need any special equipment – not even a hand mixer!

Add the eggs, oil, and vanilla to a medium bowl. Whisk well to combine.

Now switch to a spatula and stir in the cake mix until well combined, followed by the diced strawberries. The batter should be thick.

Spread the strawberry brownie batter into a greased and lined 8-inch square baking pan. Bake the brownies at 350°F for 21-25 minutes. You want the edges to be puffed and the center to be set.

Let the strawberry brownies cool completely, then whisk the glaze ingredients together in a bowl. Spread the glaze over the cooled brownies with an offset spatula.

Storage tips

Store cooled strawberry brownies in an airtight container at room temperature for 2-3 days or in the refrigerator for up to 5 days. If refrigerated, let them come to room temperature before serving.

  • 1 box strawberry cake mix 15.25 ounces
  • ½ cup diced fresh strawberries

For the glaze:

  • 1 cup powdered sugar
  • 2 tablespoons strawberry preserves
  • ½ teaspoon lemon zest
  • 1 tablespoon lemon juice

Instructions 

  • Preheat oven to 350°F. Spray (1) 8×8-inch baking pan with nonstick spray and line with parchment paper. Set aside.
  • In a medium bowl, whisk together the eggs, vegetable oil, and vanilla. Use a spatula to stir in the cake mix until well combined, followed by the diced strawberries; the batter will be thick.
    2 large eggs, ⅓ cup vegetable oil, ½ teaspoon pure vanilla extract, 1 box strawberry cake mix, ½ cup diced fresh strawberries
  • Spread the batter evenly into the prepared pan. Bake for 21-25 minutes, or until the edges are puffed and the center is set.
  • Allow to cool completely.
  • Once cool, whisk the glaze ingredients together in a small bowl. Spread over the cooled strawberry brownies with an offset spatula.
    1 cup powdered sugar, 2 tablespoons strawberry preserves, 1/2 teaspoon lemon zest, 1 tablespoon lemon juice
