Caramel, chocolate, and flaky salt is such a winning combination. I don’t think I’ll ever get over pairing rich caramel and chocolate with that bite from the salt.

It’s why salted caramel brownies, pecan caramel clusters, and salted caramel blondies are some of my favorite things.

These Rolo Ritz Cracker Cookies are my newest obsession. They combine all of these flavors into a treat that is super easy to make and is a total crowd pleaser.

What are Rolo Ritz cracker cookies?

This is one of those recipe ideas I got while scrolling on social media. I saw someone combine Rolo candies and butter crackers with chocolate and just had to give it a try myself.

These aren’t “cookies” in the way that you normally think of them. They’re not made with a cookie dough and baked like my favorite chocolate chip cookies or easy sugar cookies.

But a sandwich cookie is the easiest way to describe what happens when you sandwich a Rolo candy between two Ritz crackers and drizzle the whole thing in melted chocolate.

Each of these beauties is the perfect balance of salty and sweet. If you love millionaire shortbread (especially with a bit of flaky salt on top), you’ll love these Rolo Ritz Cracker Cookies.

Ingredients you’ll need

All of the ingredients for Rolo Ritz Cracker Cookies are pantry staples, so you can keep everything on hand for the next time a craving for them strikes.

You’ll need:

  • 48 Ritz crackers
  • 24 Rolo candies
  • 1/3 cup chocolate chips
  • 1/2 teaspoon coconut oil
  • Flaky sea salt (optional)

You can use milk chocolate or semisweet chocolate chips, whichever you have on hand.

The coconut oil simply makes the chocolate easier to drizzle. If you don’t have any on hand, you can use vegetable shortening or just omit it.

How to make Rolo Ritz cracker cookies

Place half of the crackers upside down on a parchment-lined baking sheet. Add a Rolo candy on top of each cracker, right in the center.

Bake at 250°F for 5 minutes. All we’re doing is softening the candies enough to sandwich the crackers together.

Once the pan comes out of the oven, immediately top each Rolo with a second cracker to create a sandwich cookie. Let the sandwiches cool for 10 minutes so the chocolate and caramel can set.

Move the cookies to a wire rack over a sheet of parchment paper. This will keep your work surface clean while you drizzle the cookies with chocolate.

Add the chocolate chips and coconut oil to a small microwave-safe bowl. Microwave at 50% power in 30-second increments, stirring after each, until the chocolate is smooth and melted.

Transfer the melted chocolate into a piping bag or zip-top bag. Snip a small hole in the corner and drizzle the chocolate over the cookies.

You can also use a spoon to drizzle the chocolate, but it might not end up as even. It’s really up to you based on how you’d like them to look!

If you’d like, sprinkle the tops of the Rolo Ritz Cracker Cookies with a bit of flaky salt while the chocolate is still wet.

Let the chocolate set completely before stacking or storing the cookies.

Storage

Store Rolo Ritz Cracker Cookies in an airtight container at room temperature for up to 1 week.

You could also freeze the cookies for up to 3 months. Let them thaw at room temperature for 1-2 hours or enjoy them while frozen!

Recipe variations

  • Use gluten-free butter crackers in place of the Ritz crackers for a gluten-free treat.
  • Swap the chocolate chips for white chocolate, vanilla candy coating, or colored candy melts.
  • If you prefer more chocolate coating, dip the cookies into the melted chocolate to cover them completely. If you go this route, you will need to double or triple the amount of chocolate used.
  • Making these for a party or holiday? Swap the flaky salt for colorful sprinkles to match any occasion!

Rolo Ritz Cracker Cookies

Rolo candies, buttery crackers, and chocolate come together in the perfect sweet-sweet combination. These Rolo Ritz Cracker Cookies are quick and easy to make for a party or movie night treat.

Ingredients

  • 48 Ritz crackers divided use
  • 24 Rolo candies unwrapped
  • cup milk chocolate or semisweet chocolate chips
  • ½ teaspoon coconut oil or vegetable shortening
  • flaky salt optional

Instructions 

  • Preheat oven to 250°F. Line a large baking sheet with parchment paper.
  • Place 24 Ritz crackers (top side down) onto the prepared baking sheet. Add one Rolo candy to the center of each cracker. Bake in preheated oven for 5 minutes.

  • Remove the pan from the oven and place on a wire rack. Immediately sandwich a second Ritz cracker onto each Rolo to create a sandwich cookie. Allow the Ritz cracker cookies to cool for 10 minutes.

  • Transfer the cookies from the pan to a wire rack. Place the wire rack on a sheet of parchment paper. This will keep your counters free of melted chocolate during the drizzling process.
  • In a small microwave-safe bowl, add the chocolate chips and coconut oil. Microwave at 50% power in 30-second increments, stirring often until the chocolate is melted and smooth. Use a rubber spatula to transfer the melted chocolate to a piping bag or ziptop bag. Snip a small hole in the tip of the piping or ziptop bag. Drizzle the chocolate over each Ritz cracker cookie and if desired, sprinkle with a bit of flaky sea salt. Allow chocolate to set completely before stacking or storing the Ritz cracker cookies.
    1/3 cup milk chocolate or semisweet chocolate chips, ½ teaspoon coconut oil, flaky salt

Notes

The coconut oil helps to thin out the chocolate to make it easier to drizzle. However, if you do not have it on hand, it can be omitted.
Store in an airtight container at room temperature for up to 1 week.
