Chewy Lime Sugar Cookies

Are you a lime lover? If so, look no further because this is one amazing cookie. It’s sweet, soft, chewy, limey and amazing.

Lime flavored treats are a summer staple in my house, I love the fresh, crisp flavor it imparts to both desserts and savory dishes. When I had my Hip Hostess giveaway last month, a reader left me a link to these cookies. Out of over 500 comments, this recipe stood out in my mind, so I immediately bookmarked it! Well, I am glad I did, because they are simple and brilliant!

I actually followed this recipe exactly as written which is rare for me, but it honestly looked perfect. The coconut adds a slight textural element and it marries perfectly with the tartness of the lime and the sweetness of the sugar. This recipe compelled my friend, Jo to leave me a love note on my desk after I brought one to work for her. I am definitely going to play around with this recipe using other citrus fruits…think oranges, lemons and grapefruit! Now wipe the drool from your mouth and make them, eat them, and love them! Chewy Lime Sugar Cookies

Yield: about 3 dozen cookies

Prep Time: 15 minutes

Cook Time: 8-10 minutes


  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • Zest of one large lime, finely minced
  • 3 tbsp lime juice
  • ½ cup unsweetened toasted coconut
  • 1/2 cup sugar for rolling cookies


  1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  2. In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
  3. Using a mixer, beat together the butter and sugar until smooth and very fluffy.
  4. Beat in egg, vanilla extract, lime juice and lime zest.
  5. Gradually blend in the dry ingredients and toasted coconut.
  6. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart.
  7. Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
  8. Let stand on cookie sheet two minutes before removing to cool on wire racks.

    So I did make these for our Mother’s Day Celebration and they were a major hit! Young and old loved em and everyone wanted to know what the citrus flavor was and how I had thought of it. They are delicious and not too lime overpowering at all! I got almost 40 cookies out of the batter if I had just stopped eating the dough I would have gotten more. I made them small and they smelled great and I loved the toasted coconut addition in them. I’ll make them all summer! Very easy and very good.

    i literally JUST made these. i cut some of the sugar out because i only had sweetened coconut. i think i cut a litttle bit too much, but honestly, they are still good! they taste light, yet at the same time buttery and soft and delicious. definitely will make again!

    We made these for a baby shower . They were soft, chewy and oh, so good. I really liked the fact that these tasted different than the usual cookie fare. They cooked up beautifully too as they held a nice round shape and were a pretty pale color. Yum!

Mine got a little flat so they weren’t real chewy so maybe I did something wrong? What is the secret to cookies that don’t go flat? They were still delicious!

    I’m with Michelle. I made them and loved the flavor, but they turned out pretty flat so not as chewy. I noticed my batter was pretty moist, so it was hard to roll it into balls…and that it got denser and easier to roll as I got to the end of the batch. Any ideas? Because I definitely want to make them again! Thanks for another great taste combination! ( I loved the fig balsamic kabobs, too!)

    Hi! I made these cookies in the spring and they were wonderful! In preparing to make them again, I notice that the recipe doesn’t specify salted or unsalted butter; which did you use? I used unsalted the first time with great results, but I’m wondering if I should add more salt.

    I made these this past weekend. they were delicious! I was wondering though….I’m really big on lime flavor and would like a stronger taste. If I were to also sprinkle lime zest on the cookie would that be too strong and would I need to do it before or after baking?

    I will be attending an annual cookie exchange in Chicago and plan to leave as this year’s big winner. I recently moved to Fl and figure I will dazzle the gals with your chewy lime/coconut cookie. I am not a baker and to be perfectly honest, not many in attendance are either, but it’s time to get serious. Before I get started, are there any tips for baking these cookies. I generally have to bake twice as much as I need do to failure. Also, any cute ideas for presentation?     Anyway, these cookies are fantastic! Absolutely perfect. I live in Germany, where the flour is different and they don’t even have the same type of coconut. But their strange coconut flakes worked in these cookies and for any other people living in Germany, use half Type 550 and half Type 405. Thanks for sharing the recipe! We all really, really loved them.

    I made these tonight and they turned out very well. I used lemon juice instead of lime. I like a tart cookie so I rolled some in Country Time Lemonade before baking and it gives them a nice zing. It does make it a little harder to get them off the cookie sheet because of the different sugar in the country time.

      What if you sprinkled a tiny bit of the Country Time on top either before or right after the oven, instead of adding it into the dough? I wonder if it would burn on top… I just found the recipe and think that I will try the lemon version, too, with the lemonade mix as a “garnish” on the top.

    Thanks for the recipe. I’ve made them twice now, the second time I increased the lime juice and didn’t toast the coconut. Also, I made logs out of the dough, stuck them in the freezer for 15 minutes or so, and then just sliced them and sprinkled them with sugar mixed with the zest. Made them not quite so sweet as rolling them in sugar.

    Just made the Chewy Lime Coconut Sugar Cookies. I changed the recipe a little…I added another large lime zest to give it more flavor. Other then that followed the recipe exactly and made 10 dz cookies. I will make these again and probably increase the amount of coconut as it was not very prevalent in the flavor. These will go great with homemade ice cream.

    Great cookies! IMHO it’s a lot of treacherous work to grate lime peel. But I’m oh, so glad I tried it for these cookies ….. well worth the effort.
    I added lots of sweetened coconut – I have no idea where to get unsweetened.

    I’ve made these twice (after finding on Pinterest…)
    1) I made without any lime or coconut. Basic sugar cookie. These are how I personally love sugar cookies…..chewy, a little crispy on the edges. I did put a full 3 cups of flour in, as I like mine a little more dense and they turned out great.

    2)I made with lemon juice and zest and without coconut. This time I needed to use up some lemon cream cheese frosting and these cookies went perfect with it.

    I’m going to try the actual lime recipe soon, this is a great base sugar cookie recipe to play with.

    Oh, and I just baked on a dark, non-stick cookie sheet and they baked up just fine.

    Hi! I’ve made these cookies numerous times with great success. The texture, the lime flavor – it’s all perfect. I have a friend who loves all-things-lime and she just *adores* these cookies. The reason I’m posting though is because this week I made them slightly differently (sort of inadvertently on a whim). I went for my limes and realized I had some really beautiful Meyer lemons. So I substituted those for the lime equally (zest and juice). I also chilled the rolled, sugared balls in the fridge overnight because I needed to for my schedule’s sake. I’m not sure what exactly did it, but HOLY MONKEY BANANAS they came out amazing. The sweetness of the Meyer lemons lent to a very subtle citrus flavor, so it’s almost hard to tell they are even “lemon cookies.” I just called them “the-worlds-best-ever-holy-monkey-bananas-sugar-cookies” for short ;) Anyway, just a fun anecdote I thought I’d share.

    I will continue to make the original lime version of these regularly, because this is a killer recipe, but the Meyer lemon was a brilliant option too! Thank you for the excellent baking prowess as usual!

    I have made these MANY times. The only exception is I do not toast the Coconut. They are DELICIOUS!! I also add more Lime Zest than called for. Just gives them more of a Lime taste.
